Freezer Bacon, Egg & Cheese Breakfast Wraps

When I was in college, late nights were too common, whether it was from late night studying or super late night partying. In the morning, every minute of sleep counts, so there is very little chance that those extra 20 minutes in the morning will be spent making a full breakfast. 

These wraps don’t take very long to make, so when you catch a moment on a lazy Sunday, whip up a batch of these and you’ll thank yourself for it every morning.

You can be as creative with this as you want. Try switching up your fillings by using breakfast sausage, or try using egg whites and sautéd veggies if you’re looking for a healthier option.

RECIPE OVERVIEW


Step 1: Warm the tortillas so that they are flexible to roll without breaking.  Microwave them for 10 seconds or warm on the stove on a dry pan on high heat, 5 seconds each side.

Step 2: Assemble the burritos by portioning out the bacon, eggs & cheese.

Step 3: To roll, fold in the sides.

Step 4: Then bring up the base of the burrito and tuck under filling.

Step 5: Roll all the way. Repeat with the rest.

Step 6: In the same pan used to warm tortillas, brown the seam of the burrito until light brown.

Step 7: Place the rolled burritos on a sheet pan lined with parchment paper.  Cover with plastic wrap and place in the freezer for an hour. Once they’re frozen solid, remove them from the freezer.

Step 8: Individually wrap the burritos in plastic wrap.

Step 9: When ready to eat, microwave the burrito for 60-90 seconds & you’ll have breakfast on the go as you shuffle your way to class or commute to work.
