Prosciutto Wrapped Asparagus

Simple & sophisticated, this dish is my most requested recipe to date.

 

RECIEPE OVERVIEW


 

Bring a large pot of water to a boil.

Trim and discard the bottoms off the asparagus.

Blanch the asparagus in the boiling water, cooking for about 30 seconds.

Strain asparagus and chill in a bowl of ice cold water. This will immediately stop the cooking and preserve that bright green color and nutrients.

Once cooled, remove asparagus from water & pat dry.  Season with salt and pepper.

Drizzle over olive oil & mix to coat each piece well.


Cut the prosciutto longways into 1/2 in thick strips.

Wrap each asparagus in the prosciutto, starting at the base of the asparagus,winding your way up.

Turn on the broiler on high. Place the asparagus on a baking sheet, leaving space in-between.

Broil on the center rack for 2-3 minutes, monitoring closely using the oven light.


Finished asparagus should be lightly crisp and sizzling.

Ingredients
  • 1 bundle asparagus (thin ones), washed
  • 4 oz prosciutto, cut into 1/2″ thick strips (longways)
  • 1 tsp olive oil
  • kosher salt & fresh cracked black pepper to taste
Instructions
